Tasty non-smoked jerky with a mild flavor, made following the same procedure as that used in the production of Serrano ham.
It is proceeded with a salty for a later curing using the hind quarters of the veal. Once cured, it has slightly darker tones than those that appear when using pork.
It is recommended to serve it with a light touch of olive oil that enhances its flavor.
For its correct conservation it is recommended to keep it refrigerated.
