Sivaris round rice is a medium grain variety rice, which has been grown in the Albufera Natural Park in Valencia for years. Japanese varieties have a greater capacity than indica variety rice to absorb the flavor of the broth that is being cooked. Once cooked it is a tender and delicious rice. It is a rice that opens easily (it becomes pasty) and has an approximate cooking time of 15 minutes, which must be respected to avoid overcooking. Especially recommended for one of the signature dishes of Valencian gastronomy, paella, although it is ideal for all types of rice, both dry and sweet.
