EVOO made with a selection of indigenous olives from Castellón, essentially with the Serrana de Espadán variety. By cold extraction and subjected to a natural decantation (without filtering), we achieve a high level of fruity with a low acidity, the aromas and natural antioxidants (polyphenols) are enhanced.
Bright yellow in color with greenish flashes, it is a smooth and sweet oil with minimal bitterness and almost non-existent spiciness, which is why it appeals to any type of palate.
It pairs perfectly with any raw or cooked food, especially when dressing salads, vegetables, fish or simply adding a little to a slice of village bread.
