Medium grain japonica rice variety, which has been cultivated in the Albufera Natural Park of Valencia for generations. This variety has a greater capacity than indica rice varieties to absorb the flavor of the broth that is being cooked. Once cooked, it is a tender and juicy rice, which provides a pleasant sensation to the eye and to the palate. It is a rice that opens easily (it is stuffed) that has a cooking time of approximately 15 minutes. Especially recommended for one of the flagship dishes of Valencian gastronomy, paella, although it is ideal for all kinds of Mediterranean dishes.
