Single varietal wine 100% Monastrell from old vines. It came from a calcareous soil plot on a limestone base. Harvested by hand and limiting the actions in the winery to a minimum, the aim is to make this wine by emulating the monks of the 18th century, undergoing malolactic fermentation and aging in the old tanks that they already used. Aged for 10 months in half-buried clay amphoras in the inn winery.
We appreciate an attractive bright deep red color. It has aromas of red fruit such as cherry and ripe plum. It has an intense entry into the mouth, young and fruity. With a lot of body at the beginning that is softening giving way to austerity. Long finish that suggests a Mediterranean understory.
It fits perfectly with small game bushmeat dishes, red meats, stews and different types of cheeses.
It is recommended to serve it at a temperature between 14 and 16ºC.
